Simple syrup or sugar syrup is the lifeblood of most soft drinks. It adds the required sweetness to some tart fruits, as well as acting as a preservative to slow spoilage.
I've created this calculator to give you the 3 most common types of simple syrup - just enter how much syrup you want at the bottom and the calculator will show you how much sugar and water you'll need.
Different types of syrup work best for different drinks - you'll have to experiment to find out which one work well for you, but I tend to find heavily citrus based drinks work best with the 3:2 to offset the tartness, but it's a matter of taste.
Add the sugar and water to a large pan and heat gently.
There's no need to boil, the sugar should dissolve once the water reaches 50-60C with some gentle stirring.
Allow to partially cool, and pour into a sterilised bottle whilst still warm and allow to fully cool in the bottle.
